It’s the beginning of October here in Cyprus and while the temperature has definitely gotten cooler, it in no way feels like Autumn. When i’m looking for something to quench my thirst i usually will always opt for water. There is nothing better than water, but there are some days where you just want something a little more sweet, a little more refreshing. That’s when I like to make iced-tea. I don’t like buying those tinned or bottled iced-teas from the shops because they are just full of sugar and other additives which are not good for you. When making your own iced-tea you can add whatever flavours you like and as much or as little sugar as you like. I don’t usually like to consume sugar but there are rare occasions when i do crave something sweet. On those days i don’t restrict myself, but I do prefer to have something that is homemade. So i know exactly what I’m putting in my body….whether it be homemade banana cake or this refreshing iced-tea.

My go to tea has always been Rooibos, like the true South African I am haha. It is possible to find in Cyprus. I have found it in numerous supermarkets like Alpha Mega & Carrefour. I highly recommend trying it out! It is so delicious and so good for you. Rooibos is a herbal tea which means it naturally has no caffeine in it. It has been known to be used as a cure for headaches, insomnia, asthma, eczema, bone weakness, hypertension, allergies and much more. So hope you give this a try the next time you want a refreshing drink.

Lemon & Mint Iced Tea

  • Prep Time: 5m

Ingredients

  • 1 c Fresh Lemon Juice / φρέσκο χυμό λεμονιού
  • 1/2 c Fresh Mint Leaves, chopped / φρέσκο δυόσμο
  • 2 1/2 tbsp. Sugar / ζάχαρη
  • 4 c Freshly brewed tea of choice (Rooibos) / τσάι

Instructions

  1. Make 4 cups of tea. I used Rooibos (South African Herbal Tea). Make your tea as strong as you would like and leave it on the side to cool down. Then place in the fridge.
  2. Wash the mint and place all the rest of the ingredients in a high speed blender with some ice and blend well.
  3. Add the blended mixture to the tea, mix well and leave in the fridge. You could always taste the tea at this point and add more sugar if you prefer your iced tea extra sweet.
  4. Serve in a tall glass full of ice for a refreshing drink.
