This recipe is an all time favourite of mine. It’s quite a popular recipe in South Africa and is often made when having a braai (BBQ). It takes quite a while to cook but the preparation for it doesn’t take long, and once it’s in the oven then you can prepare whatever else you’re making for dinner or lunch in the meantime. Trust me it will be worth it! Think soft, creamy potatoes with sauteed mushrooms and onions. It’s so good!

  • 4 medium Potatoes, peeled and cut into thin slices / μεσαίες πατάτες, κομμένο σε φέτες
  • 1 large Onion, sliced / μεγάλο κρεμμύδι, κομμένο σε φέτες
  • 250 g Portobellini Mushrooms, sliced / Portobello μανιτάρια, κομμένα σε φέτες
  • 3 cloves Garlic, minced / σκελίδες σκόρδου, τριμμένες
  • 500 ml Vegan Cream (Alpro Soya Vegetal Cream) / Κρέμα νηστίσιμη
  • 1 pkg Knorr Brown Onion Soup mix / κουτάκι Knorr μείγμα έτοιμης σούπας κρεμμύδι
  • 1 pinch Salt & Pepper / Αλάτι & πιπέρι
  • 1/2 c Vegan Cheese, grated / νηστίσιμο τυρί, τριμμένο
  • 1 tbsp. Coconut Oil / λάδι καρύδας


  1. Preheat your oven to 190 degrees. Brush a baking dish with olive oil and set aside.
  2. Wash and slice your potatoes, onions and mushrooms. In a shallow pan sautee the onions, garlic and mushrooms until half cooked.
  3. In a jug, add your cream and soup mix and mix well.
  4. Start to layer your potatoes. After one layer, add a bit of mushroom and onion mix. Pour a little cream then continue to layer until you finish your ingredients.
  5. Cover the dish with foil and place in the oven for 1 hour. After an hour remove the foil, add the grated cheese and place back in the oven for around 30 minutes until the potatoes are cooked and browned on top.
