Delicious plant-based, vegan french toast with no refined sugar!

French toast! I literally hadn’t eaten French toast in maybe 3 years!! Isn’t that insane? I just sort of erased it from my mind when I went plant-based because I thought you had to have eggs! But, no you don’t! This recipe is so easy and simple to make, i’m kind of kicking myself as to why I never thought of this earlier. It’s the perfect sweet, delicious breakfast for the weekend and to give the kids as a treat. It’s also a much healthier version as there is obviously no eggs and no refined sugar either. Bonus!

Lets talk why eggs are bad for you….in case you’re still unsure! I know, everyone keeps going on about protein and antioxidants…etc. But eggs are basically a cholesterol bomb! They cause inflammation and a recent study has even said that eating eggs is the same as smoking when it comes to carotid artery plaque build-up (carotid arteries run from your heart to your brain, if there is a blockage in one or both of these arteries then this decreases the amount of blood flow to your brain. This can lead to a stroke.) There is also a risk of catching salmonella, and that’s not something you want to endure! So skip the eggs…this recipe and Steph’s Tofegg Scramble are proof that you can have your cake and eat it too!  So lets get into the recipe and enjoy a plant-based life!

Vegan French Toast – Τηγανίτες

Ingredients

  • 1 medium Banana (with brown spots) - μέτρια ψημένη μπανάνα
  • 1 tbsp. ground Flax Seeds - 1κσ. Λινόσπορο αλεσμένο
  • 1 tsp. Cinnamon - 1κγ. Κανέλα
  • 1/2 tsp. Nutmeg - 0.5κγ. Μοσχοκάρυδο
  • 1 tsp. Vanilla Essence - 1κγ. Αρωμα βανίλιας
  • 1/4 c Oat Flour* - Αλεύρι βρώμης*
  • 1/4 c Plant-based Milk (plus optional 1-2 tbl) - 1/4φλτ. φυτο-βασισμένο γάλα (συν προαιρετικά 1-2κσ. )
  • 4 slices rustic bread ** - φέτες χωριάτικο ψωμί **
  • Coconut oil (for cooking) - λάδι καρύδας (για μαγείρεμα)

Instructions

  1. Take a shallow dish big enough to fit your batter and slices of bread. Mash your banana until smooth.
  2. Add the rest of your ingredients, except the bread, and mix until well combined. The extra 2 tablespoons of milk is in case your batter is too thick. You want the consistency to be similar to pancake batter.
  3. Dip each bread separately ensuring both sides are well coated.
  4. Melt a little coconut oil in a frying pan and place your battered slice of bread, Allow to cook for a few minutes until brown, flip over and repeat. The more browning the better as it means the banana is being caramelised.
  5. Once both slices are cooked, add some sliced banana, a sprinkle of cinnamon and a drizzle of maple syrup. Enjoy!

* Oat flour can be made by simply blending your oats in a food processor until fine.

    ** Ideally the bread should be a little stale.
