Summer is officially here in Cyprus! Nothing screams summer more than a braai / BBQ, and what better to BBQ / braai than a delicious burger? I’m sure most people will think having a delicious burger is next to impossible on a plant-based diet.. But they’re actually better when made from healthy nutritious ingredients! I’m not talking about those gross potato filled veggie patties you find in the supermarket. I’m talking a proper. hearty. homemade. burger. The soya mince in this recipe keeps this burger “meaty” and hearty..and the caramelised mushrooms and onions gives it that something special.
These patties are perfect for freezing too. I always keep burgers in the freezer for those nights where you feel like a take-out but are still wanting to keep healthy. These, and a pack of frozen oven chips, are always in my freezer. So all i need to do is stick them in the oven and that’s it. I do hope you give these a try!
