Ricotta ‘cheese’ (Quick & homemade!) / ‘Τυρί’ Ricotta

Quick and homemade vegan ricotta! By itsaplantbasedlife.com

Im just gonna get straight into the logistics of this one: 100gr of THIS dairy-free Tofu version of Ricotta has 77% of your daily calcium needs, 40% of your protein needs and 67% of your manganese needs andddd supplies you with B12! So you could get all that by just filling your sandwhich today with a rich serving of this ricotta. It takes ONE minute to make, yes ONE minute (ok maybe TWO if you adjust the seasoning) and can last in your fridge for up to a week. Its very versatile in recipes as you can use it for a sandwhich filling, to fill roasted vegetables, in a lasagne, in stuffed pasta or even simply as a dip with some crudites.
