Cannellini Bean Sandwich Spread / Dip

For those of you who don’t know, I am a new mom to a now 9 month old girl. I am also a working mom. Those who have kids will know that there is just not enough hours in a day to do anything!  Why am I telling you this? Because today’s recipe is for those of us who don’t have a lot of time but still want a tasty and healthy easy to make lunch option. This is a sandwich spread that can be made on a Sunday for the week ahead. Make sandwiches or wraps for work or even for the kids to take to school.

This spread is full of protein and no cooking is involved. You literally just need a food processor! Its so simple to make… but don’t let that fool you into thinking it isn’t packed full of flavour. This has become Rami’s favourite sandwich filling, and he is hard to impress. The main ingredient is cannellini beans. I like to keep tinned beans in my pantry for convenience but of course you’re more than welcome to cook dried beans (if you have the time).

This also doubles as a tasty dip for any crudités. Cannellini beans come packed with good amounts of antioxidants, iron and dietary fiber. They also contain several nutrients including vitamin K and minerals like copper, phosphorous, calcium, manganese, potassium and molybdenum. Sun dried tomatoes are also full of health benefits. With high levels of lycopene, the antioxidant levels in sun dried tomatoes can help lower your risk of cancer and age-related diseases like cataracts and macular degeneration.

Cannellini Bean Sandwich Spread / Dip

Ingredients

  • 1 tin Cannellini Beans, drained and rinsed -
  • 1 tbsp. Fresh Lemon Juice - 1κ.σ. χυμό λεμόνι
  • 5 Sundried Tomatoes , in olive oil - 5 λιαστές ντομάτες σε λάδι
  • 1/2 tbsp. Dill, dried - 1/2κσ. άνιθο αποξηραμένο
  • Salt & Pepper, to taste - αλατοπίπερο
  • 1 Spring Onion, finely chopped - 1 φρέσκο κρεμμυδάκι ψιλο-κομμένο
  • 2 tbsp. Capers - 2κ.σ. κάππαρι
  • Handful of Fresh Parsley, chopped - 2 χούφτες μαιντανό κομμένο

Instructions

  1. Add everything except Spring Onion, Capers and Parsley into a food processor and process until everything is mixed well and the consistency is that of a thick spread / dip.
  2. Place mixture in a bowl and add the rest of the ingredients. Mix well and store in the fridge.
