Broccoli & Corn Fritters – Μπιφτεκάκια σιταροπούλας

Traditional fritters are usually battered or breaded and fried, but I hatee frying food so i'm always trying to bake or grill everything. In most cases it comes out pretty well and a lot healthier! And These fritters are no exception! I came about this recipe because I have been trying to come up with some ideas for my daughter's first birthday. I cannot believe she will be turning 1 already! Creamy Kuna-Melt Jacket Potato (10 mins & no-cook!)

You need that recipe which is QUICK, NO FUSS, FEW INGREDIENTS and when you're in DONT-WANT-TO-COOK mood. Right? OR you simply miss a tuna-melt jacket potato and don't quite know how to substitute it. If you fall into either of these categories, this is the recipe for you. Im leaving the description and writing short, just to match the easiness and quickness (is that a word?) of this recipe. Its creamy, melty & filling and just what you want when you come home later than expected from work and you're like 'CBA to cook' (CBA = Cant be Arsed). By the time the microwave pings that your potato is ready, you've nailed the filling. Oh yeah! Tip: Save leftovers OR Double the recipe and have a delicious sandwich filling or toast topper for the rest of the week!!

I remember the day we decided to go vegan as a couple, my first thought was "This can only be made easy if the way my kitchen runs is changed". Ok thats a lie. That was my SECOND thought.
