Its been decided here at Its-a-PBL (now that there are enough recipes in the repertoire – yey ! ) to give you a throwback every so often, to some of our older recipes that you may not have noticed or weren’t easy to find again. Good idea? Of course its a good idea

We’re gonna start our first throwback with this originally south african dish, designed by Michelle, which resembles a potato dauphinoise, but is oh . so . much . better. I doubled the quantities and made Michelle’s dish last sunday for our neighbourhood block party (like YEA we make eachother’s recipes..!), and it was such a success. Its so creamy, decadent and flavoursome.. and the best thing is, that its in ONE bake, making it a great thing for a dinner party or a BBQ. To this day no-one knows that it was dairy free / vegan – they all think there was cows milk and cows cheese all over it. WRONG ! Potato, Mushroom and Onion Bake (Ψητό μανιταριών και κρεμμυδιών)

Great for a “Pot Luck” or dinner party! Creamy, decadent and very tasty. You can make the mushroom/onion mix and the onion-cream ahead of time to make this even easier on the day of your dinner

  • 4 medium Potatoes, peeled and cut into 5mm thick slices / μεσαίες πατάτες, κομμένο σε φέτες
  • 1 large Onion, sliced / μεγάλο κρεμμύδι, κομμένο σε φέτες
  • 250 g Portobellini Mushrooms, sliced / Portobello μανιτάρια, κομμένα σε φέτες
  • 3 cloves Garlic, minced / σκελίδες σκόρδου, τριμμένες
  • 500 ml Vegan Cream (Vegetal Cream) / Κρέμα νηστίσιμη
  • 1 x 50gr package powdered Knorr Brown Onion Soup mix / κουτάκι Knorr μείγμα έτοιμης σούπας κρεμμύδι
  • Salt & Pepper / Αλάτι & πιπέρι
  • 1/2 c Vegan Cheese, grated / νηστίσιμο τυρί, τριμμένο


  1. Preheat your oven to 190 degrees. Brush a baking dish with olive oil and set aside.
  2. Wash and slice your potatoes, onions and mushrooms. In a shallow pan sautee the onions, garlic and mushrooms in some oil, until half cooked. Season with salt and pepper
  3. In a jug, add your cream and soup mix and mix well.
  4. Start to layer your potatoes. After one layer, add a bit of the mushroom/onion mix. Pour over some cream, and continue to layer like this until you finish your ingredients.
  5. Cover the dish with foil and place in the oven for 1 hour. After an hour remove the foil, add the grated cheese and place back in the oven for around 30 minutes or until the potatoes are cooked and browned on top.
