Why we’re standing up to cancer..!

Every year there is a big campaign in England titled 'Stand up to Cancer'. One normal day on the couch, as me and my husband were watching various entertainment TV programs which 'stood up to cancer' by accepting donations, we thought to ourselves 'What about if we took it literally?' On the 16th December, tomorrow, at Larnaca (Cyprus) seafront, my husband Ryan will literally stand up to cancer, in order to raise awareness for PREVENTION of cancer. Both of us believe that prevention and preventative medicine/nutrition are extremely powerful tools and under-rated. Tools which we can have access to every time we take a bite; tools which we can have access to every time we decide to sit down and watch pointless telly instead of moving; tools we have access to each time we could have done something for our soul and instead we go scrolling aimlessly on Facebook. Vegan Mince Pies

Mince Pies, Sometimes i love them, sometimes i don't. One things for sure, during Christmas, guaranteed there is going to be someone at your table or in your home that loves them. And how proud are you gonna be that you'll have them ready and on-hand in your kitchen! Oh and they're vegan too 😁 Admittedly this recipe is a bit of a cheat because it uses ready-made mince meat. I wanted to write a recipe which didn't take you a long time (and making your own mince-meat can be faffy) and also showed you how easy it is to make shortcrust pastry. Spiced Cookies (Sugar-free, Gluten-free, Vegan!)

Its christmaaaaaas! So you're gonna need to bake/cook things that make your kitchen smelling all christmassey and your belly happy, right!? Mini Meatloaf Muffins (Vegan, Gluten-free, Freezable, Easy!)

You actually probably already have the ingredients for these in your kitchen cupboards! So basically, you have Sunday Lunch sorted 😇 There's quite a few vegan meatloafs out there, but what i noticed was that most of them were a tad complex, using ingredients that i didn't necessarily consider 'store-cupboard'. Smoothie bowls are such an excellent way to get a SERIOUS nutritional punch because not only do you have what is IN your smoothie, but you can then add toppings to it, which add texture but also nutritional benefits. Coconut, Lime & Matcha Cheesecake (Healthy, 10 ingredients, Dairy-free & Gluten-free!)

Its about time for a dessert recipe don't you think? I love it when i can have a sweet thing in my house, that is actually completely plant-based while also being a healthy thing to eat. You could theoretically have a slice of this (or two?) for breakfast and it would be quite balanced in terms of protein, antioxidants and fats! Caramelized Warm Salad (Καραμελωμένη ζεστή σαλάτα)

This recipe came together because of two things: 1. Im obsessed with everything caramelized at the moment.  The subtly sweet caramelized buttery squash & carrot, and the caramelized lentils with molasses, is seriously just bliss in the mouth. 2. I wanted to design a recipe which was high in protein, but light. Throwback!: Potato, mushroom and caramelised onion bake (Ψητό πατάτας, μανιταριών και καραμελωμένων κρεμμυδιών)

Its been decided here at Its-a-PBL (now that there are enough recipes in the repertoire - yey ! ) to give you a throwback every so often, to some of our older recipes that you may not have noticed or weren't easy to find again. Creamy Kuna-Melt Jacket Potato (10 mins & no-cook!)

You need that recipe which is QUICK, NO FUSS, FEW INGREDIENTS and when you're in DONT-WANT-TO-COOK mood. Right? OR you simply miss a tuna-melt jacket potato and don't quite know how to substitute it. If you fall into either of these categories, this is the recipe for you. Im leaving the description and writing short, just to match the easiness and quickness (is that a word?) of this recipe. Its creamy, melty & filling and just what you want when you come home later than expected from work and you're like 'CBA to cook' (CBA = Cant be Arsed). By the time the microwave pings that your potato is ready, you've nailed the filling. Oh yeah! Tip: Save leftovers OR Double the recipe and have a delicious sandwich filling or toast topper for the rest of the week!!
