Peanutbutter & Banana Pancakes (Κρέπες Φυστικοβούτυρου & Μπανάνα)

  Who doesn’t love pancakes? Pancakes are a great treat, especially for weekend mornings. I know most people will think they don’t have time in the mornings to make a batch of pancakes, but I promise these took me 10-15 minutes to make, and they’re so worth it. My favourite topping for pancakes has always been the simple combination of sugar, cinnamon and fresh lemon juice; so simple and so delicious. These are a more decadent style of pancakes. Apple Granol-Crumble

This has to be one of my fave breakfasts ever. No joke. There is something so satisfying about combining two opposites: soft and crisp, hot and cold. I think texture and temperature are just as important when eating because, well hey, taste isnt the only sense right! The warm soft apples and crisp granola, surrounded in the ice cold milk just absolutely does the trick. The stewed apples alongside the oat-filled crumble, provide slow-release energy for the day with it being low GI, keeping you fuller for longer, ticking your fibre needs, upping your zinc intake and having cholesterol-lowering properties. Chocolate Coconut Energy Balls (Μπάλες ενέργειας με σοκολάτα και καρύδα)

After I got sick and started to research nutrition and food, i became obsessed with healthy eating and everything had to be homemade. No refined sugar, nothing processed….everything had to be made with real ingredients! Once you start eating a “clean” diet you start to actually stop craving certain things. But there are always moments when you just feel like something sweet or a treat. I tend to stay away from all chocolate bars, especially since becoming plant-based vegan. Swedish cinnamon buns – Σουηδικά κουλούρια κανέλας

Well, ive been posting recipes inspired from my Cypriot side, so i figured time to post something from my Swedish side. Whether you’re swedish or not, everyones heard of or seen the infamous cinnamon bun. In Sweden a cinnamon bun (aka. “bullar”) is crucial during the necessary “Fika” time – a “necessary break” you take everyday (work-day or not) at around midday with coffee and a bun. To this day, my mormor / grandma, at 11:30 every single day, sits down with her coffee and a homemade cinnamon bun. Carrot Cake / Κάροτ κέικ, νηστίσιμο

  My carrot cake recipe is one i’ve been editing and perfecting ever since my University days when me and my housemate cured our home-bound boredom several times with baking; carrot cake being our first attempt. And i use the word attempt for a reason. But alas, since then, both her and I have bettered our skills, and i share with you the current version. Jaffa Nice Cream (“Παγωτό” Τζάφα)

A two-in-one nice-cream recipe of Jaffa flavor or Banana chocolate chip. An “ice cream” that is cream-less, guilt-less, low calorie, zero fat and takes less than 10 minutes to make. Personally I had this in the late morning heat (so refreshing!) and I didn’t go easy on the chocolate sauce! The chocolate sauce is so simple and quick to put together, it made me wonder, what have I been doing all these years spending more than 5 minutes on making a choc-sauce?! If you don’t like the “Jaffa” (i.e. chocolate/orange) combination, freeze three ripe bananas instead, use plant-based milk instead of orange juice, and follow the recipe as is –> banana chocolate chip nice cream (with chocolate sauce on top if you want!).
