Two-tone Lasagna / Δίχρωμη λαζάνια

We are coming to the end of the greek-cypriot theme, yes a lasagne is by no means an original greek dish (all credit to you Italians out there!), there is no cypriot household that does not make a lasagne at least once a month. I made this dish when my mother in law came over to stay with us in Cyprus – i’ve said it before and i’ll say it again – one-pan recipes are just great when you’re cooking for more than two people and want to make an impression! Lentil Cottage Pie / Cottage Pie με Φακές

Cottage Pie, Shepherd’s Pie….it’s pretty much the same dish but using different meat. Its one of those dishes that a lot of people would consider as comfort food. Its warm and creamy and easy to make! Of course this version is plant-based. I’ve used lentils instead of mince meat, so you know this is healthier and more delicious than the original…If I do say so myself 😉 The great thing about this dish is that it’s so easy to make and then freeze. Makaroni tou fournou – Μακαρόνια του φούρνου

For anyone growing up or having lived in Cyprus, this dish evokes a sense of nostalgia and homeliness – the traditional macaroni bake (aka. Makaroni tou Fournou in Cypriot and Pastitsio in Greece). Im on a roll with traditional greek-cypriot dishes so i thought i simply could not go on, without sharing this classic. Aubergine melt del forno / Μελιντζάνες του φούρνου

Us Mediterraneans love a good aubergine / eggplant and this dish is a great ode to them: a cross between the classic Italian Melanzane parmigiana and the Greek Cypriot Melintzanes – it takes the best out of both classic recipes and makes a baby which is this aubergine melt. This bake literally melts in your mouth and hence the title name (i must admit i didn’t know what to title this recipe – “the baby of melanzane parmigiana and Melintzanes” didnt seem too catchy).
