Homemade Baked Beans / Μπέϊκτ Μπήνς

No need to buy baked beans in a can, here is an easy, cheap and super tasty way of making them at home! Of course this guarantees you wont get the stupid amount of sugar in tinned baked beans. Did you know one average serving of a leading baked bean brand has 13gr of sugar?! That's almost four spoons of processed sugar you've got on your toast (and we all know how bad sugar is for you). This is something i make on Saturdays in order to have in the fridge for a week (or in the freezer for ages!) for those sunday breakfasts or those i-dont-know-what-to-have-for-lunch-and-CBA-to-cook days.   Only one cup of dried beans makes about 5 servings of baked beans, so this is a good (and cheap!) thing to cook up. Although it takes just over an hour to [...]

Tofegg scramble

Thought you couldn’t have scrambled eggs without eggs? Think again. Thought you couldn’t whip up a cooked breakfast / lunch in under 20 minutes? Think again. This no-egg-but-tastes-just-like-egg scamble is the cholesterol, saturated-fat and cruelty-free sister of the classic scambledy eggs. I love it because its so versatile: […]

Vegan Lahmajoun (λαχματζιούν) + Mini Life Update

Hi everyone! I’m back! Before I start with the recipe I wanted to just update those who are interested on what’s been happening (no offence taken if you skip this and go straight to the recipe). Well remember I posted about what it was like to be pregnant on a vegan diet? If not and you’re interested then you can click here. Well the pregnancy is over! I gave birth to my baby girl, Tara, on the 31 October 2016. I had a natural birth and she was born a healthy 3.05kg! Proof that a plant-based diet is perfectly fine whilst pregnant…in fact I would say it’s ideal! I had an easy pregnancy and now a healthy baby so there you go! I am exclusively breastfeeding, which is the most amazing experience! I don’t know why more moms in Cyprus [...]

Tofuken Chow Mein

This is one of those recipes i have on hand when 1. i have to use up veggies in the fridge 2. when i haven’t got alot of free time 3. when im feeding a crowd and/or 4. When its a sunday night and i feel like chinese. With this recipe you’ll be bringing the chinese “take-out” home for less than 3eur per person and without any of the grease / saturated fat / cholesterol. Its super easy to make, takes less than 30 minutes and packs such a punch of flavour. The flavour is incredible considering the little time it takes to make (I actually caught Hubs licking the sauce off the plate)! Its also a great thing to make if you’re feeding omnivoures, since the braised tofu seriously looks and tastes like meat/chicken. I tested this on my [...]

My Butternut Squash Soup

Nothing screams “Autumn is here” than when you have that first bowl of soup. And my first bowl of soup in winter, is always this one. I first made it at University and have been making it every year since. Its so creamy, buttery and decadent without having any cream, dollops of butter or anything unhealthy. Its showcasing the butternut squash which is currently seasonal, and thats all it needs to shine. The flavour it packs is ridiculous for a bowl of […]

Okra stew (Cypriot Bamia) / Μπάμιες

Okra, or ladies fingers (appropriate for Halloween?!) are in season at the moment here in Cyprus, and when i can, i love using seasonal local produce. Threfore i thought, what a better comforting autumnly heavenly dish than this traditional “stew”. I put “stew” in inverted commas because it doesnt taste like a stew, its more like a deep tomato sauce which the ladies fingers bathe in (wow i somehow just made that sound even creepier). The beauty of this classic cypriot dish, is in its simplicity. One ingredient is the hero, and the rest are all cupboard / fridge staples. […]

Hassleback potatoes / Πατάτες Χάσελμπακ

So since autumn has come in, all i want is roast potatoes. No idea why, but i just want a simple, non-complex roast potato. Weird craving, and no, im not pregnant. So after a few nights of a simple roast potato as a side, i decided to “spice it up” a little bit, and elevated the humble roastie into a hassleback roastie. Hassleback potatoes are actually a Swedish way of cooking potatoes. In the 1700s (yeah, ages ago!) a chef in the Hasslebacken Hotel in Stockholm (its clicked where they get their name from now ey), decided to cook his roast potatoes for his higher class guests a bit differently, popularizing this style of potato since then. So here is the royal roast potato where the slices do look a little bit like a crown. The centers are all soft and fluffy, while [...]

South African Mushroom & Onion Potato Bake (Ψητό πατάτας & μανιταριών)

This recipe is an all time favourite of mine. It’s quite a popular recipe in South Africa and is often made when having a braai (BBQ). It takes quite a while to cook but the preparation for it doesn’t take long, and once it’s in the oven then you can prepare whatever else you’re making for dinner or lunch in the meantime. Trust me it will be worth it! Think soft, creamy potatoes with sauteed mushrooms and onions. It’s so good! […]

Crispy Spinach Pie / Spanakopitta

What greek, and non-greek for that matter, doesn’t know and love a spinach pie?! I mean its pie. And its filled with spinach. Enough said! I figured a pie is perfectly suited to kick off our new theme of Heavenly Autumnly, especially as its a light one, made with filo pastry, considering its not that cold yet (yey!). Did you like the leaves and flower i made on top of the pie in ode to Autumn season? I hope you got the hint cos i was pretty proud of them.   […]

Quinoa Tabbouleh Salad

I need to make a disclaimer here, this is in no way a traditional Tabbouleh Salad…and might I add that my Jordanian husband was adamant I mention that. When I told Rami my idea for the next blog recipe his face went into shock as soon as I said quinoa and tabbouleh in the same sentence. Tabbouleh is NOT traditionally made with quinoa obviously, but I was inspired by the famous Arabic salad and thought it would be a great idea to add quinoa to make it a more protein packed, substantial salad…suitable for a packed lunch. There is also the addition of fresh mint and pomegranate seeds (again not in traditional Tabbouleh). So in actual fact, according to Rami, this is not Tabbouleh…but hey I can call my salad whatever I want and in my mind this is like [...]
