Healthy Homemade Ferrero Rocher

Happy New Year!! I cannot believe it is 2018. With a new year comes, of course, new year's resolutions. And most are to eat healthy and less sweets and sugar. Which is exactly why this recipe is perfect for you! Its not only healthy and super quick to make, it's also oh. so. good! I'm not even exaggerating, when I told Rami about my idea and started to make it, he was so skeptical, but when he tried it the look on his face said everything! The added bonus to this is it's a healthy treat to give to your little ones. If they are nagging you for a chocolate bar, try offering this instead, it will satisfy the sweet craving without the unhealthy refined sugar and dairy you get from the usual chocolate bars.  I won't bore you with [...]

Vegan Mince Pies

Mince Pies, Sometimes i love them, sometimes i don't. One things for sure, during Christmas, guaranteed there is going to be someone at your table or in your home that loves them. And how proud are you gonna be that you'll have them ready and on-hand in your kitchen! Oh and they're vegan too 😁 Admittedly this recipe is a bit of a cheat because it uses ready-made mince meat. I wanted to write a recipe which didn't take you a long time (and making your own mince-meat can be faffy) and also showed you how easy it is to make shortcrust pastry. I suppose this is more a short-crust pastry recipe than anything, but hey its Christmas so lets stuff some mince in there..! Yes it has sugar, but its christmas, and you're probably not gonna have another mince pie for another [...]

Caramelized Warm Salad (Καραμελωμένη ζεστή σαλάτα)

This recipe came together because of two things: 1. Im obsessed with everything caramelized at the moment.  The subtly sweet caramelized buttery squash & carrot, and the caramelized lentils with molasses, is seriously just bliss in the mouth. 2. I wanted to design a recipe which was high in protein, but light. Just one serving of this dish is low in carbohydrates (not that we dont like carbs - we love carbs, but some nights you just want something light!), gluten free, under 350 calories (without dressing) and with near 30gr of protein ! :o This autumnal recipe is perfect for this time of year.. Its the end of summer, but its still kind of warm so you're still enjoying salads, but its not that warm that you want cold food.  You know what i mean right? I dont tend to [...]

Broccoli & Corn Fritters – Μπιφτεκάκια σιταροπούλας

Traditional fritters are usually battered or breaded and fried, but I hatee frying food so i'm always trying to bake or grill everything. In most cases it comes out pretty well and a lot healthier! And These fritters are no exception! I came about this recipe because I have been trying to come up with some ideas for my daughter's first birthday. I cannot believe she will be turning 1 already! I'm looking to make finger foods and snacks as apposed to a sit-down dinner. These fritters are the perfect addition to my menu in progress. This recipe is really easy. The best part is you could make the mixture the night before, and then just stick them in the oven 30 min before your guests arrive. They also freeze well, so are perfect for when you don't know what to [...]

Summer Pasta Salad / Καλοκαιρινή σαλάτα με ζυμαρικά

Who doesn't love pasta? I could eat pasta every day and never get bored. We are in the middle of August here in Cyprus and the temperature is at it's highest, so eating hot pasta is not really ideal. But a pasta salad loaded with delicious fresh ingredients is perfect for a lunch or light supper. Plus this is so quick and easy to make, which makes it all that more appealing!   This salad is super easy to transport which makes it a great pack and go meal. Whether to take with you to the beach, for work or even as a side dish for a braai (BBQ).  Its loaded with my favourite veggies...sweetcorn, broccoli, sundried tomatoes...etc. The dressing is really great and refreshing. I highly recommend using pomegranate molasses (can be found in Alpha Mega), but normal molasses [...]

Frozen-Yogurt Lollipops / 4 ingredients, sugar-fat-free!

Guys, this is SO healthy, you could actually have them for breakfast! Its also for those hot summer nights when you want something sweet & refreshing, but don't really want sugar nor do you want alot of calories nor fat. Yeah its pretty much for any time! Its also great if you want to give your kids something sweet but want it to be a healthy treat. You can "hide" alot of superfood goodies in there too and they wont even notice, like i did with the turmeric (I wanted to give the banana flavoured lollies a yellow colour but of course didnt want to use artificial colouring - for obvious reasons). You can get creative with flavours and swap the fruit around to suit your likes! The granola is also optional but its in there to achieve a good balance [...]

Olive Bread Balls / Χωριάτικες Ελιόπιτες

There is nothing more Cypriot than the humble olive. As my father and relatives tell me, traditionally in cyprus, breakfast was usually olives and bread (& fruit if it was summer). [Unfortunately, thats no longer the case, where this humble breakfast has been replaced with cheese, eggs, smoked ham and chronic disease]. The village olive pie (as known in greek) was made to combine these two humble ingredients into one. Local herbs were used to complement the olive and extra virgin olive oil used to bind it. The secret ingredient in these pies is the orange juice, which they used to use instead of sugar in the older days (since sugar was rare to find). And By the way, im not even talking about reallyyy older days; up until the 60s, sugar was still a rarity in the villages (as was chronic disease, again, [...]
