In Cyprus temperatures often soar, so eating hot pasta is not always ideal. But a pasta salad loaded with delicious fresh ingredients is perfect for a lunch or light supper. Plus this is so quick and easy to make, which makes it all that more appealing! This is very easy to transport which makes it a great pack and go meal too. Recipe also includes a homemade dressing recipe

Ingredients

Salad Ingredients

  • 250 g Tricolor Fussili Pasta
  • 1 Jar Marinated Artichokes (160g), roughly chopped - κονσέρβα μαριναρισμένες αγκινάρες (160γρ), ψιλοκομμένες
  • 2 c Frozen Sweetcorn (Steamed)- Κατεψυγμένο γλυκό καλαμπόκι μαγειρεμένο
  • 2 c Frozen Broccoli (Steamed) - Κατεψυγμένο Μπρόκολο (μαγειρεμένο)
  • 1 c Sundried Tomatoes, roughly chopped - Λιαστές ντομάτες, ψιλοκομμένες
  • 3/4 c Capers - 3/4φλτ. κάππαρι
  • 2 large handfuls Baby Rocket Leaves - Μεγάλες χούφτες φύλλα Ρόκα

Dressing Ingredients

  • 1 tbsp. Pomegranate Molasses (or plain molasses) - 1κσ. Μελάσες ροδιού (ή απλή μελάσσα)
  • 2 tbsp. Fesh Lemon Juice - 2κσ. Φρέσκο χυμό λεμονιού
  • 1 tbsp. Apple Cider Vinegar - 1κσ. Μηλόξυδο
  • 1 tbsp. Olive Oil - 1 κσ. Ελαιόλαδο
  • 1/2 tbsp. Dried Mint - Αποξηραμένο δυόσμο
  • Salt & Pepper to taste -Αλάτι & Πιπέρι

Instructions

  1. Boil your pasta according to package instructions while steaming your vegetables.
  2. While everything is cooking, chop up the other ingredients and mix together the dressing.
  3. Once everything is done , mix it altogether in a bowl, stir and place in the fridge.
